Carrot Oat Cookies

I’m a big fan of easy recipes. Here’s a simple one that can be a part of breakfast or a delicious snack!
Carrot Oat Cookies
Yield: 14 cookies
Ingredients
1 cup instant oats
¾ cup whole wheat flour (I used regular unbleached flour)
1½ tsp baking powder
1½ tsp cinnamon
⅛ tsp salt
2 tbsp coconut oil or unsalted butter (I used coconut oil)
1 large egg (room temp)
1 tsp vanilla extract
½ cup maple syrup (room temp)
¾ cup grated carrot (about 1 medium)
Instructions
In a large bowl, mix oats, flour, baking powder, cinnamon, and salt.
In a medium bowl, whisk together coconut oil/butter, egg, vanilla, and maple syrup. Stir into dry mix, then fold in carrots. Chill dough 30 min.
Preheat oven to 325°F. Line baking sheet with parchment or silicone mat.
Scoop dough into 14 rounds. Flatten slightly.
Bake 12–15 min. Cool on baking sheet 15 min, then transfer to wire rack.
Important Note:Do not substitute matchstick carrots—carrots must be finely grated.
