Sweet Potato Skillet Meal

Sweet Potato & Beef Skillet


This meal was super easy, quick and kid friendly. I hope you enjoy!


Serves: 6-8

Prep Time: 10 minutes

Cook Time: 25 minutes

Total Time: ~35 minutes


Ingredients

  • 1 tbsp olive oil

  • ¼ yellow or white onion, chopped

  • 1 lb ground beef

  • 1 can (14–15 oz) crushed tomatoes

  • 1 can (15 oz) black beans, drained and rinsed

  • 4 medium sweet potatoes, cubed

  • 1 can (15 oz) corn, drained

  • 1 tsp garlic powder

  • ½ tsp onion powder

  • Salt and black pepper, to taste

  • 1 cup shredded cheese (cheddar, Mexican blend, or mozzarella)

  • Optional toppings: sour cream, diced avocado, fresh cilantro, salsa


Directions

  1. Sauté the onion: In a large skillet, heat olive oil over medium heat. Add chopped onion and cook 2–3 minutes, until translucent.

  2. Cook the beef: Add ground beef and cook until browned, breaking it apart as it cooks.

  3. Add sauce and seasonings: Stir in crushed tomatoes, garlic powder, onion powder, salt, and pepper. Reduce heat to low.

  4. Cook the sweet potatoes: Place cubed sweet potatoes on a microwave-safe plate, cover with a damp paper towel, and microwave for 5–7 minutes or until tender.

  5. Combine everything: Add cooked sweet potatoes and black beans to the skillet. Stir and simmer 5 minutes.

  6. Add corn and cheese: Stir in corn, heat for 1 minute, then remove from heat. Sprinkle shredded cheese over the top and cover the skillet with a lid for 1–2 minutes until melted.

  7. Serve: Scoop into bowls and top with sour cream or avocado.
