Nacho Average Corn Dip

This Super Bowl Sunday give yourself grace and "permission" to enjoy a wide variety of foods. "Permission" in quotation marks because you don't need permission but I want you to know it's ok! Some people feel this way! Remember, all foods can fit with balance and moderation. All foods are nourishing. Enjoying foods with others is an amazing way to connect, build relationships and create memories!


Here's the deets on this yummy dip!


Ingredients:

  • 2 (15.25 ounce) cans of whole kernel corn (about 3 cups)

  • 1 cup shredded Colby Jack cheese (or pepper jack for a spicy kick)

  • 1 can of Rotel (diced tomatoes and green chilies)

  • ⅔ cup sour cream

  • 1 (8 ounce) cream cheese, cubed

  • ¼ cup queso fresco

  • Tortilla chips or Fritos corn chips, for serving

  • 2 tsp Tajín seasoning (optional)

    Optional: 

    • 2 jalapeños, seeded and diced,

    • 1/2 of a lime, juiced,

    • crumbled bacon,

    • 1 lime (half juiced, half cut into wedges) and/or

    • ¼ cup cilantro, chopped

Instructions:

  1. Prepare the Slow Cooker:

    • Place the corn, shredded Colby Jack cheese, sour cream, taco seasoning, chili powder, paprika, cream cheese cubes, crumbled queso fresco and 1 can of Rotel into the slow cooker.

    • Turn on low heat and cook for 2 hours, stirring occasionally to ensure the cream cheese melts and everything combines well.

  2. Garnish as desired and Serve:

    • Remove from the slow cooker and sprinkle optional topping(s) as desired!

    • Serve hot with your choice of chips (Tortilla chips or Fritos work great).
