
I'm not always big on baking because well frankly I don't like measuring foods, but these banana blueberry muffins were delicious and pretty easy to put together!
Ingredients:
2 ripe bananas
1/2 cup granulated sugar
1/2 cup unsalted butter, melted
1 large egg
1 1/2 cups all-purpose flour
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1/2 tsp cinnamon
1 cup frozen blueberries, thawed under running cold water, blotted with paper towel
Optional: Cane sugar sprinkle topping
Recipe:
Preheat the oven to 375 degrees F and line a muffin tin with paper liners.
In a large mixing bowl, mash bananas. Then, mix with granulated sugar, melted butter, and egg.
In a separate smaller bowl, mix together flour, baking powder, baking soda, salt and ground cinnamon.
Gradually add the dry ingredients, to the wet ingredients, mixing until just combined. Avoid overmixing.
Gently fold in the blueberries, until they are evenly distributed into batter.
Divide the batter evenly among the muffin cups. Fill about 3/4 full.
Optional, sprinkle with cane sugar.
Bake for 18-20 minutes or until toothpick is inserted in the center comes out clean.
Remove muffins from the oven and let them cool in the muffin tin for a few minutes before transferring to a wire rack.
Once cooled, enjoy!
